My new favorite breakfast food

I haven't written on this blog in what seems forever but I thought I'd add a great post about my recent gluten free finding! I made a long time favorite last week...rice krispy treats...well not exactly I used Chex Rice and Marshmallows along w/Earth Balance and it came out delicious! I then made it into portions and put it into 6 Ziploc bags. I'm currently munching on some Honey Nut Chex...very addictive! Now I can finally enjoy a cereal again...and its gluten free!

My big find plus two recipes

Up until a month ago I thought most products would be impossible to find gluten free...I was wrong! Arbonne has over 50 gluten free products. Since self-diagnosing myself as gluten intolerant I know how important it is to have gluten free items. I'm glad I made the choice to try Arbonne!

Ingredients: 1 cup dark gluten-free ale (Green's Dubbel Dark Endeavor Ale) 8 Tbs. unsalted butter or non-dairy alternative (Earth Balance® Buttery Sticks or Shortening) 3/4 cup unsweetened cocoa powder (not Dutch Alkalai Processed) 2 cups granulated cane sugar (Wholesome Sweeteners®) 3/4 cup sour cream, dairy or non-dairy (Tofutti® Better Than Sour Cream or Follow Your Heart® Sour Cream Alternative) 2 large eggs 1 Tablespoon (*not teaspoon) gluten-free vanilla extract (Nielsen-Massey® Madagascar Bourbon Vanilla) 2 cups Jules Gluten Free™ All Purpose Flour 1 Tablespoon (*not teaspoon) baking soda
Directions:
(*Note- you will need a large saucepan for this recipe, not a mixer and mixing bowl!)
Preheat oven to 350 F (static) or 325 F (convection).
Prepare a 9-inch springform tube or bundt pan by buttering and dusting lightly with Jules Gluten Free™ All Purpose Flour.
In a small bowl, whisk the sour cream with the eggs and vanilla.
Measure out 1 cup of beer and let the head settle to be sure your measurement is correct. Pour the beer into a large saucepan (you can drink the rest!). Add the butter and heat just until melted over medium heat. Whisk in the cocoa powder and the sugar until smooth.
Add the egg mixture into saucepan mixture and whisk. Add the flour and baking soda until mixed.
Pour into the prepared pan and bake for 35-40 minutes, or until a cake tester inserted into the center of the cake comes out fairly clean.
Let the cake cool in the pan on a cooling rack for 15 minutes, then invert to remove from pan onto a cake plate.

Gluten free Croatian Donuts like what I cheated with on my trip but here's a gluten free recipe just find a yeast alternative:
Ingredients:
1 quart rice/soy milk
Find yeast substitute and use it
6 egg whites
Grated rind of 1 lemon
1 tablespoon salt

1/2 Earth Balance
Brown sugar- 1 cup for making mixture for inside
1 Tablespoon Gluten free Vanilla powder/extract for mixture for inside

2 cup agave
6 cups of Jules Gluten free flour
Directions:
Dilute yeast in a large pan or bowl with a little warm milk and flour. Let rise until light and bubbly (sponge). Then add lemon rind, flour, agave, egg whites, salt, butter and beat with a wooden spoon. Beat until dough bubbles and crackles leaving spoon free of dough. Cover with a warm floured cloth. Let rise until double.

Take dough by spoonfuls and drop on floured board. Flatten out with the palm of your hand. Dot each center with brown sugar and vanilla mixture. Take another spoonful of dough and flatten on top of the brown sugar mixture. Dip the edge of water glass in flour and cut doughnut out or use a regular doughnut cutter. Re-use also the ends of dough that are left over. Spread a clean floured cloth on a tray and place doughnuts far enough apart because they rise quite a bit.

Drop doughnuts into hot grease and fry a golden brown. Keep pan covered when doughnuts are first put in, turn doughnuts over once and let them remain uncovered. Remove to a pan lined with paper towels to absorb grease. Sprinkle with powdered sugar and serve.

Braids: Make 1 recipe of DOUGHNUTS (above). Take by spoonful and drop on floured board. Roll out by hand and braid or twist into shapes. Drop into hot grease and cover. When golden brown on one side, uncover pan and turn doughnuts over and fry uncovered. Remove when golden brown. Drain on paper towels.

Spoon Doughnuts: Make 1 recipe of DOUGHNUTS (above). Make the dough in a pan or bowl. Take by spoonfuls and drop into hot grease. Fry to golden brown. Cover until one side is browned, then remove cover and fry other side uncovered. Remove when golden brown. Drain on paper towels.

Yummy gluten free food

I recently got two amazing packages full of gluten free goodies in the mail! From Katz's Gluten free and Shabtai!
I started the morning with a honey muffin/cupcake from Katz's yummy reminds me of those honeycake days from jewish holidays! I am currently snacking on Shabtai's Chocolate Chip Biscotti...yummy even my non gluten free husband loves 'em!
Shabtai chocolate chip cookies were a snack at my recent party all the guests were surprised to hear they were gluten free! The apricot cookies from Katz's are good but my favorite thing is the chocolate cupcakes! They are very moist! I will post more reviews soon!

Amazing gluten free companies

Just as I was sitting home bored...trying to get my Arbonne company started...I just became a consultant the other day...I got two packages in the mail. One from Katz Gluten free, and one from Shabtai! Katz gave me so much which is incredible since the jewish holiday is coming up! I'm so excited for all of these goodies!

Honeymoon part 2

The Cruise was Royal Caribbean 12 nights Mediterranean from Barcelona to France, Italy, Croatia, and Greece.
Before you cruise with Royal Caribbean make sure you call and warn them about your food allergies as I had done that but still had problems! Since i'm lactose and gluten free I wanted to make sure they were prepared. My husband and I had dinner everynight scheduled for 9pm, not the your time dining option they also offer (which I would have loved to have done but thought they wouldn't be able to accommodate me) They made me a gluten free bread that wreaked of baking soda and looked like sponge cake.
Our first stop was Nice which we had an excursion to Monaco and then Nice. I had my meals on the ship pre-ordered a full day in advance and most mornings just had their gluten free pancakes that tasted like crepes.
I loved visiting both places but did not find many gluten free options at either one.
Next stop was Pisa and Florence which was amazing! Florence actually has gluten free pizza. Can't remember the name but from a search I just did one of these should be it: Ristorante Circo & Sons, Via del Giglio,26/28r. Tel: 055.289694

The pizza was sooooooooooo good...definitely my best italian gluten free food!
I also found a health store that had gluten free croissants but let me tell you...those were not good!
Rome was our next stop and it was great! We visited Vatican City, The Forum, Colosseum, and more.
Naples was our next stop and we ended up taking a boat to Sorrento to have their pizza...my husband was dying for that. I actually had gluten free pizza but it was nowhere as good as Florence. Not even close! They did have a fabulous mint slush that I fell in love with...just ordered the syrup I hope its the right one from amazon. So rich in mint oils, etc.
I did the most shopping in Barcelona, Florence, and Sorrento.
Now our trip was almost over...just about 5 days left...
We saw Venice next...amazing! This and Nice were my two favorite places of the entire honeymoon! So beautiful! I did not find much to eat in Venice as my husband had pasta someplace, I just had some of his salad and then a Mint Slushy. Venice is known for their masks and our ship was having a masquerade ball that night so I got one...my husband had a few days earlier in Florence I think.
The next day we had a spa day!

A Gluten Free Honeymoon Part 1

My honeymoon was a European honeymoon...visiting 7 countries in two weeks.
We stayed at the Mur Muri in Barcelona for 3 days before boarding the cruise ship.
The hotel had no gluten free options but I did find some great restaurants that offer Tapas (appetizers/small plates of food) One in specific brings to mind CATALANA (93-216-0368) especially since we almost didn't even go there because of the hour wait. AMAZING FOOD!
I did however really like the Pharmacy's in Spain because they have quite a few gluten free items including amazing Schar Wafers which I got in hazelnut and chocolate. Delicious!
The next two parts will include all of cities/countries I visited on my Royal Caribbean Cruise to the Mediterranean Cruise.

Best Ice Tea

I've always been a huge ICE Tea drinker. I used to drink sips religiously as a child in my school lunches but ever since I started dating David its been Inkos and Arizona. I first tried Inkos while visiting David when he worked for Related by Columbus Circle. Ever since I've been addicted! I love their honeydew iced tea! The beginning

I was diagnosed a long time ago with Lactose Intolerance (2nd grade) and just recently self-diagnosed myself with Gluten Intolerance while a few years back I was also diagnosed with IBS but probably was just Gluten Intolerance. I have started having some favorite foods and restaurants which I will be posting that are both gluten and lactose free in their offerings. Get ready for the best reviews out there! My favorite topic: the best cookies: Shabtai's Lace cookies (I've always been a cookie aholic and believe me these don't even taste like they're gluten and dairy free but they are yay)

Some of my favorite gluten and dairy free combinations to make great meals:
I used to LOVE raisin bread with cream cheese as a child, and now I can enjoy it with Glutino's Raisin bread and Tofutti Cream Cheese...absolutely delicious together!



My favorite Raw and Vegan place so far is One Lucky Duck, I love their lemonade and Pumpkin salad.
